Coriander is a fragrant and useful plant that grows almost everywhere in Iran, and most of its production is in Hamadan province. Like dry dill, the leaves and stems of this plant are used in Iran as one of the components of eating vegetables. Coriander, in addition to giving a pleasant taste and smell to food, is used as tea, tea and as a decorative ingredient in many soups and dishes.

Coriander seeds also have a strong aroma and are used in cooking, confectionery and traditional medicine in Iran. Fresh and dry coriander have the same properties. But fresh cilantro does not smell good, and the smell of its dry type is better; Because the bad smell of this plant disappears with drying.

First, clean the cilantro completely and wash them in a basin full of water to completely remove the pollutants and mud from the greens. In the traditional method, coriander drying is done in several ways.

  • The best way to dry coriander is to sort it and hang it on a rope because the aroma of coriander remains for a long time.
  • The next way to dry coriander is to put it in a colander after washing the vegetable completely to remove excess water. Then put it on a tray or a cloth and place it in a warm place away from direct sunlight, it is called dry shade. In this drying method, the green color of coriander remains completely green.
  • Another way to dry cilantro is to chop it after washing and draining it in a colander and place it on a cloth to dry completely.

Drying is done in an industrial way with a dryer. This method is the best way to dry vegetables because you won’t have any waste.
